Pancake
Ingredients
- 1 cup oat flour (i ground mine from whole gf oats)
- 1 1/2 tsp baking powder
- pinch of salt
- 1 tsp ground cinnamon
- 2 ripe bananas, mashed
- 2 tbsp melted coconut oil + more for cooking
- 1 tsp vanilla extract
- 1 tbsp maple syrup (or other liquid sweetener like honey or agave)
- 1 1/2 cups (250 ml) non-dairy milk (I used unsweetened almond milk)
Preparation
In a bowl combine and mix the dry ingredients
In another bowl combine the wet ingredients
Mix the wet ingredients into the dry using a fork or whisk (don’t worry if it’s a bit lumpy, just make sure there are no floury dry bits)
Heat your pan on a medium heat and a little bit of coconut oil
Fry 2 tbsps of mixture until small bubbles start to appear on the surface before flipping and cooking for around 1 Min
Eat with more banana or berries and coconut yoghurt (I used @provamel)
