Pancake

Ingredients

  • 1 cup oat flour (i ground mine from whole gf oats)
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 1 tsp ground cinnamon
  • 2 ripe bananas, mashed
  • 2 tbsp melted coconut oil + more for cooking
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (or other liquid sweetener like honey or agave)
  • 1 1/2 cups (250 ml) non-dairy milk (I used unsweetened almond milk)

Preparation

  1. In a bowl combine and mix the dry ingredients

  2. In another bowl combine the wet ingredients

  3. Mix the wet ingredients into the dry using a fork or whisk (don’t worry if it’s a bit lumpy, just make sure there are no floury dry bits)

  4. Heat your pan on a medium heat and a little bit of coconut oil

  5. Fry 2 tbsps of mixture until small bubbles start to appear on the surface before flipping and cooking for around 1 Min

  6. Eat with more banana or berries and coconut yoghurt (I used @provamel)
