Potatoes
Ingredients
- 3 lbs yukon gold potatoes
- 1 1/2 cups cheddar cheese + more to sprinkle on top
- 1 1/2 cup milk of choice
- 1/4 cup @bertolli_us extra virgin olive oil
- 1 onion, diced
- 2 tbsp coconut flour
- salt/pepper/garlic to taste
- parsley garnish (optional)
Preparation
Preheat oven to 350 degrees & lightly grease a 9x13 pan
Peel potatoes and boil for 20 minutes.
While potatoes are boiling, sautee onions until translucent. In a blender, combine onions, non-dairy milk, olive oil, and spices until smooth. Pour back into frying pan. Add flour and cheese, simmer for 5-7 minutes (or until cheese melts) stirring frequently
Slice potatoes very thin (~1/8 inch). Add a layer of potatoes to the bottom of the pan, top with ~ 3/4 cup cheese sauce, then repeat until there are three layers of potatoes/sauce. Sprinkle desired amount of cheese over top.
Bake for 45 minutes. Let cool, top with parsley & enjoy :)
