Healthier Potato Cheese Dish with Olive Oil

Ingredients

  • 3 lbs yukon gold potatoes
  • 1 1/2 cups cheddar cheese + more to sprinkle on top
  • 1 1/2 cup milk of choice
  • 1/4 cup @bertolli_us extra virgin olive oil
  • 1 onion, diced
  • 2 tbsp coconut flour
  • salt/pepper/garlic to taste
  • parsley garnish (optional)

Preparation

  1. Preheat oven to 350 degrees & lightly grease a 9x13 pan

  2. Peel potatoes and boil for 20 minutes.

  3. While potatoes are boiling, sautee onions until translucent. In a blender, combine onions, non-dairy milk, olive oil, and spices until smooth. Pour back into frying pan. Add flour and cheese, simmer for 5-7 minutes (or until cheese melts) stirring frequently

  4. Slice potatoes very thin (~1/8 inch). Add a layer of potatoes to the bottom of the pan, top with ~ 3/4 cup cheese sauce, then repeat until there are three layers of potatoes/sauce. Sprinkle desired amount of cheese over top.

  5. Bake for 45 minutes. Let cool, top with parsley & enjoy :)
