Amazing Carrot Coconut Cashew Soup

Ingredients

  • 2 onions
  • 3 cloves garlic
  • 2 tbsp coconut oil
  • 6 large carrots
  • 4 tbsp desiccated coconut
  • 4 c water
  • 3 tsp ground coriander
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp sea salt
  • 1 tbsp coconut nectar
  • 1/2 c raw cashews soaked and rinsed + 1/2c water

Preparation

  1. Sauté chopped garlic, onion, and coconut oil for 2 minutes.

  2. Add chopped carrots, water, coconut, and all spices and flavorings except the salt.

  3. Put the lid on and bring to a boil, then reduce to a simmer for 20 minutes until the carrots are soft.

  4. Leave the mixture to cool slightly.

  5. Transfer to a blender and blend until super smooth, then return to the pan.

  6. Blend cashews and water in the same blender until they form a smooth cream, then add to the pan.

  7. Add salt to taste and reheat slightly.

Tips

  1. Serve with a drizzle of cashew aioli or olive oil and some cracked black pepper.
