Avocado Fried Rice with Stir-Fry Vegetables
Ingredients
- 2 Cups Boiled Rice
- 1/2 Broccoli
- 2 Carrots
- 1 Cup Edamame beans
- 300 Grams Tofu (thinly sliced)
- 1/4 cup Tamari sauce (plus extra for serving)
- 2 tbsp Sesame oil or Avocado oil
- Salt (according to your taste)
- 1 tsp Black pepper
- 1 tbsp Chilli paste
- 1 or 2 Avocado(s)
- 1/3 Cup Garlic Chives
Preparation
Heat a wok over medium heat and add sesame oil. Cook the tofu for 2 minutes on each side with a pinch of salt and chili paste. Remove from heat and keep warm.
In the same wok, add oil, edamame beans, carrots, and broccoli. Quickly stir-fry for about 3-4 minutes until tender. Sprinkle with salt, pepper, and a splash of tamari and chili paste. Toss well and set aside.
In the same wok, add oil, tamari sauce, chili paste, pepper, and salt. Add rice and quickly mix it with the flavorings. Cook for 2-3 minutes until the rice becomes slightly crispy.
Add garlic chives and nuts of your choice to the rice mixture. Mix well.
Remove from heat and serve the fried rice topped with the cooked tofu slices and sliced avocado. Drizzle with extra tamari sauce if desired.
