Quick Kimchi Fried Rice Bowl

Ingredients

  • 2.5 cups cooked rice
  • 1 cup diced kimchi
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 cup frozen peas
  • 1/2 cup green onions
  • 3 tbsp Tamari
  • 1 tsp sesame oil
  • Hot sauce and chili flakes to taste
  • 4 eggs

Preparation

  1. Sauté carrots in a splash of olive oil.

  2. Add broccoli and cook for another 3 minutes.

  3. Add cooked rice, peas, green onions, and diced kimchi.

  4. Stir until well incorporated, then add Tamari, sesame oil, and a drizzle of hot sauce; cook stirring until rice crisps up a bit.

  5. Cook eggs to your liking and assemble bowls.

Tips

  1. Adjust the amount of hot sauce and chili flakes based on your preferred spice level.

  2. This dish is gut-friendly due to the kimchi.
