Crispy Tofu and Vegetable Stir-Fry Bowl

Ingredients

  • ramen or udon noodles
  • carrots
  • red peppers
  • yellow peppers
  • red onion
  • yellow onion
  • caulilini
  • firm tofu
  • avocado
  • green onions
  • fresh cilantro
  • lime

Seasonings

  • Tamari
  • sesame oil
  • fresh ginger
  • hot chili oil
  • seasoned rice vinegar
  • sesame seeds
  • fresh garlic
  • vegetable broth
  • turmeric
  • garlic powder
  • nutritional yeast
  • oil

Preparation

  1. Boil the ramen or udon noodles until cooked, then toss them in a pan with a little Tamari, sesame oil, ginger, hot chili oil, seasoned rice vinegar, and sesame seeds.

  2. Chop the carrots, red and yellow peppers, red onion, yellow onion, and caulilini.

  3. Stir fry the chopped vegetables with some fresh garlic and fresh ginger in a little vegetable broth and a splash of sesame oil until slightly softened.

  4. Cube the firm tofu and toss it with turmeric, garlic powder, and nutritional yeast.

  5. Pan sauté the tofu in a little oil and splashes of Tamari until browned and crispy.

  6. Serve the dish with sliced avocado, green onions, fresh cilantro, lime, and more sesame seeds.
