Easy Flavorful Shrimp Fried Rice with Veggies
Ingredients
- Shrimp
- Salt and pepper
- Olive oil
- Sesame oil
- 1/3 cup chopped carrots
- 1 jalapeño
- 2 cups chopped broccoli
- 1/2 cup frozen peas
- 3 eggs
- Cooked rice
- Chopped green onions
- Soy sauce or tamari
- Sesame seeds
- Chili flakes
Preparation
Pat dry shrimp and season with salt and pepper.
Heat olive oil and add a drizzle of sesame oil.
Once hot, add shrimp, spread out, and cook for 2 minutes per side; remove and set aside.
Add 1/3 cup chopped carrots and 1 jalapeño to the pan and cook for 3 minutes.
Add 2 cups chopped broccoli and 1/2 cup frozen peas; cook for another 3 minutes and remove from heat.
Add a splash more of oil, beat 3 eggs and add to pan, scramble for 1 minute.
Add cooked rice and chopped green onions to the pan.
Drizzle with soy sauce or tamari.
Add veggies and shrimp back in, add another drizzle of soy sauce or tamari, and stir until well combined.
Serve with a sprinkle of sesame seeds and chili flakes.
