Spiced Shrimp Bowls with Rice and Veggies

Ingredients

  • 1 cup jasmine rice
  • 1 pound shrimp
  • 1 head broccoli
  • 1/3 cup frozen peas

Seasonings

  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne
  • Salt and pepper to taste

Optional additions

  • Coconut aminos and hot sauce (optional)

Preparation

  1. Cook the rice according to package instructions.

  2. Pat dry the shrimp and toss with the seasoning.

  3. Heat a large pan with oil, add shrimp once hot, and cook for 3 minutes per side; then remove from heat.

  4. Cut broccoli into florets and add to the pan with another drizzle of oil.

  5. Sauté the broccoli for 4 minutes, then add frozen peas and cook for another 3 minutes.

  6. Assemble the bowls with rice, shrimp, and vegetables, and drizzle with coconut aminos or soy sauce and hot sauce.
