Spiced Shrimp Bowls with Rice and Veggies
Ingredients
- 1 cup jasmine rice
- 1 pound shrimp
- 1 head broccoli
- 1/3 cup frozen peas
Seasonings
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne
- Salt and pepper to taste
Optional additions
- Coconut aminos and hot sauce (optional)
Preparation
Cook the rice according to package instructions.
Pat dry the shrimp and toss with the seasoning.
Heat a large pan with oil, add shrimp once hot, and cook for 3 minutes per side; then remove from heat.
Cut broccoli into florets and add to the pan with another drizzle of oil.
Sauté the broccoli for 4 minutes, then add frozen peas and cook for another 3 minutes.
Assemble the bowls with rice, shrimp, and vegetables, and drizzle with coconut aminos or soy sauce and hot sauce.
