Easy Rice and Beans Two Ways Meal
Ingredients
- 1 cup rice
- 1.5 cups broth
- 1/2 small onion, diced
- 1 can black beans, rinsed and drained
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup broth
- 1 red bell pepper, chopped
- Broccoli florets
- Extra virgin olive oil
- Optional: 2 handfuls spinach
- Coconut aminos or tamari or soy sauce
- Hot sauce
- Avocado
- Salsa verde
Preparation
Cook rice by boiling 1 cup rice with 1.5 cups broth, then simmer with lid on for 15 minutes.
For beans: Sauté 1/2 small diced onion, add 1 can rinsed and drained black beans, 2 minced garlic cloves, 1 teaspoon chili powder, salt and pepper, 1 cup broth, and simmer while stirring for 15 minutes.
For veggies: Sauté chopped red bell pepper and broccoli florets in extra virgin olive oil with salt and pepper; optionally add 2 handfuls of spinach at the end.
For rice and beans stir fry: Heat the cooked rice, beans, and veggies in a frying pan, and drizzle with coconut aminos or tamari or soy sauce and hot sauce.
For rice and beans burrito bowl: Serve the cooked rice and beans with sautéed veggies, sliced avocado, and drizzle with salsa verde.
