Easy Rice and Beans Two Ways Meal

Ingredients

  • 1 cup rice
  • 1.5 cups broth
  • 1/2 small onion, diced
  • 1 can black beans, rinsed and drained
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup broth
  • 1 red bell pepper, chopped
  • Broccoli florets
  • Extra virgin olive oil
  • Optional: 2 handfuls spinach
  • Coconut aminos or tamari or soy sauce
  • Hot sauce
  • Avocado
  • Salsa verde

Preparation

  1. Cook rice by boiling 1 cup rice with 1.5 cups broth, then simmer with lid on for 15 minutes.

  2. For beans: Sauté 1/2 small diced onion, add 1 can rinsed and drained black beans, 2 minced garlic cloves, 1 teaspoon chili powder, salt and pepper, 1 cup broth, and simmer while stirring for 15 minutes.

  3. For veggies: Sauté chopped red bell pepper and broccoli florets in extra virgin olive oil with salt and pepper; optionally add 2 handfuls of spinach at the end.

  4. For rice and beans stir fry: Heat the cooked rice, beans, and veggies in a frying pan, and drizzle with coconut aminos or tamari or soy sauce and hot sauce.

  5. For rice and beans burrito bowl: Serve the cooked rice and beans with sautéed veggies, sliced avocado, and drizzle with salsa verde.
