Easy Curry Fried Rice

Ingredients

  • 2 cups cooked rice
  • 1 tbsp sesame oil
  • 1 tbsp curry powder
  • 1 tbsp diced onions or onion leeks
  • 2 cloves garlic, minced
  • 1/2 to 1 tsp salt
  • Sesame seeds for topping
  • 1 tbsp soy sauce or liquid aminos

Optional add-ins

  • 1 cup corn, peas, and carrots mix
  • Mushrooms
  • Tofu
  • Spring onion, for topping

Preparation

  1. In a pan, heat the sesame oil.

  2. Add in the onions and sauté until tender. Add in the garlic and sauté as well.

  3. Add in the vegetables, tofu, mushrooms and cook until tender.

  4. Add in the rice and curry powder. Mix well. Season to taste. Enjoy while hot!
