Sheet Pan Maple Glazed Salmon with Veggies

Ingredients

  • Brussels sprouts
  • Carrots
  • Broccoli
  • Cauliflower
  • Bell pepper
  • Onion
  • Salmon
  • 2 tbsp maple syrup
  • 2 tbsp olive oil

Salmon rub

  • 1/2 tbsp paprika
  • 1/2 tbsp chili powder
  • 1 tsp coconut sugar
  • 1/2 tsp cayenne
  • Salt and pepper

Preparation

  1. Preheat oven to 400 degrees Fahrenheit

  2. Wash and trim or chop the vegetables

  3. Toss the vegetables in a bowl with 1 tablespoon olive oil, salt, and pepper, and optionally add chili flakes

  4. Spread the vegetables on a baking sheet lined with parchment paper and bake for 15 minutes

  5. Meanwhile, pat dry the salmon, rub with olive oil and the spice rub

  6. Remove the vegetables from the oven and increase the heat to 450 degrees Fahrenheit

  7. Add the salmon to the baking sheet and bake for another 12 minutes

  8. Remove from the oven and drizzle the salmon with maple syrup

  9. Broil on high for 4-5 minutes until the salmon and vegetables are crispy, being careful not to burn
