Hearty Beef Goulash Stew with Spices
Ingredients
- Olive oil
- 1 onion
- Pinch of salt
- Stewing beef
- Salt and pepper
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon cayenne
- 2-3 cups broth
- 2 bay leaves
- 2 red bell peppers
- 1 14 oz can diced tomatoes
- 1-2 cups additional broth
- 1 large potato
Preparation
Dice one onion and slow cook with a pinch of salt in a large pot or Dutch oven with olive oil until soft, about 15 minutes.
Add stewing beef, cut into smaller pieces if desired, along with salt and pepper, and cook until all sides are brown.
Add spices (1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon cayenne) and cook for another minute.
Add enough broth (2-3 cups) to cover the meat and 2 bay leaves, then simmer for 15 minutes.
Add 2 red bell peppers cut into 1-inch chunks, 1 14 oz can diced tomatoes, and 1-2 additional cups of broth; cover and simmer for another 20 minutes.
Shred 1 large peeled potato directly into the mixture, stir, and continue simmering for another 15 minutes to thicken the stew.
Add more broth if needed to adjust thickness, season to taste, remove bay leaves, and enjoy, ideally served over creamy cauliflower or potato mash with a side of crispy Brussels sprouts for a perfect meal.
