Tomato Bisque with Grilled Cheese Winter Dinner

Ingredients

  • 1 small diced onion
  • 4 chopped garlic cloves
  • 1 teaspoon crushed red pepper
  • 1 28 oz can crushed tomatoes
  • 2 and 1/4 cups broth
  • Greek yogurt
  • fresh basil
  • salt and pepper to taste

Preparation

  1. Sauté 1 small diced onion until soft for 6 minutes.

  2. Add 4 chopped garlic cloves and 1 teaspoon crushed red pepper, cook for another minute.

  3. Add 1 28 oz can crushed tomatoes and 2 and 1/4 cups broth, bring to a boil.

  4. Simmer for 15 minutes.

  5. Blend the mixture.

  6. Serve with a dollop of Greek yogurt and fresh basil.

  7. Season with salt and pepper as needed.

  8. Serve with gooey grilled cheese for optimal goodness.
