Tomato Bisque with Grilled Cheese Winter Dinner
Ingredients
- 1 small diced onion
- 4 chopped garlic cloves
- 1 teaspoon crushed red pepper
- 1 28 oz can crushed tomatoes
- 2 and 1/4 cups broth
- Greek yogurt
- fresh basil
- salt and pepper to taste
Preparation
Sauté 1 small diced onion until soft for 6 minutes.
Add 4 chopped garlic cloves and 1 teaspoon crushed red pepper, cook for another minute.
Add 1 28 oz can crushed tomatoes and 2 and 1/4 cups broth, bring to a boil.
Simmer for 15 minutes.
Blend the mixture.
Serve with a dollop of Greek yogurt and fresh basil.
Season with salt and pepper as needed.
Serve with gooey grilled cheese for optimal goodness.
