Simple Breakfast Hash with Eggs and Potatoes
Ingredients
- 3-4 medium potatoes
- olive oil
- 1/2 diced onion
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon chili flakes
- salt
- pepper
- 4 eggs
- avocado
- ketchup or salsa
Preparation
Chop 3-4 medium-sized potatoes and pan fry in olive oil for 10 minutes.
Add 1/2 diced onion and spices (1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon chili flakes, salt, pepper) and continue cooking for another 10 minutes.
Make 4 wells in the mixture, crack 4 eggs into them, and cover.
Cook until the egg whites are set and yolks are to desired consistency, about 6-10 minutes.
Serve with avocado and ketchup or salsa.
