Simple Breakfast Hash with Eggs and Potatoes

Ingredients

  • 3-4 medium potatoes
  • olive oil
  • 1/2 diced onion
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes
  • salt
  • pepper
  • 4 eggs
  • avocado
  • ketchup or salsa

Preparation

  1. Chop 3-4 medium-sized potatoes and pan fry in olive oil for 10 minutes.

  2. Add 1/2 diced onion and spices (1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon chili flakes, salt, pepper) and continue cooking for another 10 minutes.

  3. Make 4 wells in the mixture, crack 4 eggs into them, and cover.

  4. Cook until the egg whites are set and yolks are to desired consistency, about 6-10 minutes.

  5. Serve with avocado and ketchup or salsa.
