Crispy Potato Hash with Eggs and Avocado

Ingredients

  • 3 large potatoes
  • olive oil
  • salt
  • pepper
  • paprika
  • chili flakes
  • 1/2 small onion
  • 1 bell pepper
  • fried eggs
  • sliced avocado
  • Franks RedHot sauce
  • Trader Joe's Everything But The Bagel seasoning
  • spicy sausage (optional)

Preparation

  1. Dice 3 large potatoes and cook in olive oil with salt, pepper, paprika, and chili flakes for 10 minutes, stirring often.

  2. Add diced 1/2 small onion and diced 1 bell pepper and cook for another 5 minutes.

  3. Turn off the heat, cover the pan, and let it sit for another 5 minutes to soften the potatoes.

  4. Serve with fried eggs, optional Franks RedHot sauce, sliced avocado with Trader Joe's Everything But The Bagel seasoning, and optional spicy sausage.
