Easy Vegan Stuffed Bell Peppers with Quinoa
Ingredients
- 4 Bell Peppers
- 1 cup cooked grain (I used quinoa)
- 1 can beans, drained (I used black beans)
- 2 large carrots diced
- Half onion diced
- 3 cloves garlic diced
- Big handful spinach, chopped
- 2 Tbsp nutritional yeast
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 tsp paprika
- 2 Tbsp avocado oil
- Juice of 1 lime
- Salt and pepper to taste
Preparation
Slice the peppers either vertically in half or remove the tops and scoop out the seeds.
Mix all the remaining ingredients in a bowl and divide it between the peppers.
Bake in a 400F oven in parchment paper for about 25 minutes.
Enjoy with fresh cilantro on top, extra lime juice and a drizzle of olive oil.
