Easy Vegan Stuffed Bell Peppers with Quinoa

Ingredients

  • 4 Bell Peppers
  • 1 cup cooked grain (I used quinoa)
  • 1 can beans, drained (I used black beans)
  • 2 large carrots diced
  • Half onion diced
  • 3 cloves garlic diced
  • Big handful spinach, chopped
  • 2 Tbsp nutritional yeast
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • 2 Tbsp avocado oil
  • Juice of 1 lime
  • Salt and pepper to taste

Preparation

  1. Slice the peppers either vertically in half or remove the tops and scoop out the seeds.

  2. Mix all the remaining ingredients in a bowl and divide it between the peppers.

  3. Bake in a 400F oven in parchment paper for about 25 minutes.

  4. Enjoy with fresh cilantro on top, extra lime juice and a drizzle of olive oil.
