Stuffed Baked Potatoes

Ingredients

  • 4 medium potatoes (sweet, purple or regular)
  • 1 can beans (garbanzo, black or any other beans)
  • 1 small bell pepper, chopped
  • 1 small onion, chopped
  • 4 clove garlic, minced
  • 2 Tbsp avocado oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime

Preparation

  1. Slice each potato vertically and some slices horizontally, but only halfway or you will fully cut it into two pieces. Place the potatoes wrapped in aluminum foil on a baking dish and bake for around one hour or until the potatoes are soft inside. Use a fork to make sure they are soft

  2. In the mean time, heat up the oil on medium heat and sauté the onion, bell pepper and garlic for couple minutes. Then add the remaining ingredients

  3. Carefully, open each baked potato and top with the bean mixture. ✍?Enjoy with fresh chopped cilantro on top or any delicious sauce
