Mango Salsa Salmon Bowls

Ingredients

  • 1-2 diced mangos
  • 1 finely diced jalapeño
  • 1/4 cup red onion
  • 1/2 red bell pepper
  • juice of 1 lime
  • salmon
  • 2 tbsp olive oil
  • 1 tbsp coconut sugar
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • salt and pepper
  • rice or cauliflower rice

Preparation

  1. Make the salsa ahead of time by combining 1-2 diced mangos, 1 finely diced jalapeño, 1/4 cup red onion, 1/2 red bell pepper, and juice of 1 lime; set in the fridge until needed.

  2. Preheat the oven to 475 degrees Fahrenheit.

  3. Pat dry the salmon to remove excess moisture.

  4. In a bowl, combine 2 tbsp olive oil, 1 tbsp coconut sugar, 1 tsp chili powder, 1 tsp paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp chili flakes, salt, and pepper.

  5. Rub the spice mixture all over the salmon.

  6. Bake the salmon at 425 degrees Fahrenheit for 9 minutes.

  7. Assemble the dish by placing the salmon and mango salsa over rice or cauliflower rice for serving.
