Mango Salsa Salmon Bowls
Ingredients
- 1-2 diced mangos
- 1 finely diced jalapeño
- 1/4 cup red onion
- 1/2 red bell pepper
- juice of 1 lime
- salmon
- 2 tbsp olive oil
- 1 tbsp coconut sugar
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili flakes
- salt and pepper
- rice or cauliflower rice
Preparation
Make the salsa ahead of time by combining 1-2 diced mangos, 1 finely diced jalapeño, 1/4 cup red onion, 1/2 red bell pepper, and juice of 1 lime; set in the fridge until needed.
Preheat the oven to 475 degrees Fahrenheit.
Pat dry the salmon to remove excess moisture.
In a bowl, combine 2 tbsp olive oil, 1 tbsp coconut sugar, 1 tsp chili powder, 1 tsp paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp chili flakes, salt, and pepper.
Rub the spice mixture all over the salmon.
Bake the salmon at 425 degrees Fahrenheit for 9 minutes.
Assemble the dish by placing the salmon and mango salsa over rice or cauliflower rice for serving.
