Crispy Salmon Bowls with Broccoli and Rice

Ingredients

  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tbsp maple syrup
  • 2 tsp sesame oil
  • 1 tsp chili flakes
  • 1 garlic clove minced
  • Salt and pepper to taste
  • 1 head of broccoli
  • 1.5 cups uncooked rice
  • 2 cups broth or water
  • Avocado oil for cooking
  • Green onions for garnish

Preparation

  1. Cook rice according to package instructions.

  2. Cut salmon into cubes and remove skin first.

  3. Add salmon to a bowl with soy sauce, sesame oil, maple syrup, chili flakes, garlic, salt, and pepper.

  4. Let marinate for 10 minutes in the fridge or longer.

  5. Heat a large skillet with avocado oil.

  6. Add salmon pieces and cook for 3 minutes per side.

  7. Spread them apart for optimal crispiness.

  8. Cook broccoli until charred.

  9. Assemble the bowls.

  10. Garnish with green onion.

  11. For extra flavor, serve with spicy mayo.
