Lazy Chicken Ramen Bowl

Ingredients

  • 1 cooked chicken breast
  • 2 eggs
  • 2 packs of ramen noodles (spice packages discarded)
  • 2 handfuls of spinach or any greens
  • 1 small jalapeño diced
  • 2 garlic cloves minced
  • 1 tbsp grated ginger or 1 tsp ground ginger
  • 3 tbsp tamari or soy
  • 1 tbsp rice vinegar
  • 1 tbsp hot sauce
  • 1 tsp sesame oil
  • 4 cups broth

Garnishes

  • Green onion and/or cilantro

Preparation

  1. Bring a small pot of water to a boil, add eggs and cook for 6 minutes; remove and place into an ice bath.

  2. Add a splash of sesame oil and olive oil to a medium size pot.

  3. Once hot, add jalapeño, garlic and ginger, sautéing for 2 minutes.

  4. Add tamari, hot sauce, rice vinegar and cook for another 2 minutes.

  5. Add broth and simmer for 5 minutes.

  6. Add noodles and cook as per package instructions (usually 4-5 minutes).

  7. Add greens to the bottom of your bowl and top with noodles and broth.

  8. Peel eggs, cut in half and place into bowls.

  9. Add chicken, cilantro or green onions and enjoy!

Notes

  1. Chicken can be omitted or swapped for tofu.
