Peanut Butter Tofu Stir-Fry

Ingredients

  • 1/2 pack firm or extra firm tofu
  • 1/2 small onion
  • 4 cloves garlic
  • 1/2 cup cilantro
  • 1/2 lemon
  • 4 handfuls spinach
  • 1/2 cup frozen peas
  • 1 cup rice

Sauce

  • 1/4 cup natural peanut butter
  • 1/2 cup canned coconut milk
  • 1/2 cup water
  • 3 tbsp tamari
  • 2 1/2 tsp harissa or chili garlic sauce
  • 2 tbsp agave
  • 1/2 tsp salt

Preparation

  1. Prepare rice according to package instructions.

  2. Heat a skillet over medium heat and sauté onion and garlic until fragrant.

  3. Add tofu and sauté until it begins to brown and crisp, about 5-10 minutes.

  4. While the tofu is cooking, mix the sauce ingredients together until combined.

  5. Pour the sauce into the pan with the tofu and simmer on low until it thickens, adding more water if needed to thin.

  6. Add spinach and toss until wilted.

  7. Add cilantro, peas, and lemon juice.

  8. Adjust seasoning to taste, adding more salt or chili garlic sauce if desired.

  9. Serve with rice and additional cilantro.
