Chocolate Mint Brownie Bliss Balls
Ingredients
- 3/4 cup dates
- 3 heaped tbsp chocolate protein (optional)
- 3 tbsp cacao powder
- 1/2 cup almond butter
- 1/2 cup desiccated coconut (plus extra for coating)
- 1/4 cup buckwheat
- 1/2 tbsp peppermint extract
- 1 tbsp water
- 1/4 tsp pink salt
Preparation
In a food processor, blend dates, protein powder, cacao powder, almond butter, coconut, peppermint, water and salt until a crumbly dough is beginning to form. (If you are going without protein powder you won’t need the water). ⋆
Add the buckwheat and blend for another minute or two. You want the buckwheat to be slightly broken up to add a little crunch. ⋆
Roll the dough into balls and then coat in coconut. Refrigerate for 4 hours. Enjoy
