Loaded Tex-Mex Skillet with Organic Ground Beef, Black Beans, and Corn

Ingredients

  • 1 lb organic ground beef
  • 1 can black beans (Cullen's Foods)
  • 1 cup corn
  • 1 onion, diced
  • 1 15 oz can diced tomatoes (Earth's Choice)
  • 1/2 bottle of spicy taco sauce (Good Food for Good)
  • 2 cups cooked rice
  • 1 avocado, sliced
  • Option to serve with shredded cheddar

Preparation

  1. Cook ground beef until no longer pink and drain excess fat.

  2. Add diced onions and cook for an additional 4 minutes.

  3. Add diced tomatoes, taco sauce, drained black beans, corn, and cooked rice.

  4. Stir everything together and let it simmer for 5-8 minutes until the sauce thickens.

  5. Optional: Stir in shredded cheese.

  6. Serve with sliced avocado and garnish with green onions.
