Tofu Fried Cauliflower Rice
Ingredients
- 1 lb block firm tofu
- 1/2 yellow onion chopped
- 3 cloves chopped garlic
- 2 inch nub ginger chopped
- 1 tsp toasted sesame oil
- 3 T low sodium soy sauce or coconut aminos if gluten free
- 1 tsp maple syrup
- 4 baby bells sliced
- 1 cup green beans cut into bite sized pieces
- 2 tsp sesame seeds
- 1/4 bunch cilantro chopped
- 2 green onions diced
- 2 bags cauli rice
Preparation
Sauté garlic, ginger and onion in sesame oil until brown and toasty in a wok
Add tofu and cook a few minutes to get color then add peppers and green beans, cook a couple more minutes, and add 1 tsp soy sauce and maple syrup and toss well
Add cauli rice and the rest of the soy sauce and cook a couple more minutes. Top with green onion and cilantro.
