Tofu Fried Cauliflower Rice

Ingredients

  • 1 lb block firm tofu
  • 1/2 yellow onion chopped
  • 3 cloves chopped garlic
  • 2 inch nub ginger chopped
  • 1 tsp toasted sesame oil
  • 3 T low sodium soy sauce or coconut aminos if gluten free
  • 1 tsp maple syrup
  • 4 baby bells sliced
  • 1 cup green beans cut into bite sized pieces
  • 2 tsp sesame seeds
  • 1/4 bunch cilantro chopped
  • 2 green onions diced
  • 2 bags cauli rice

Preparation

  1. Sauté garlic, ginger and onion in sesame oil until brown and toasty in a wok

  2. Add tofu and cook a few minutes to get color then add peppers and green beans, cook a couple more minutes, and add 1 tsp soy sauce and maple syrup and toss well

  3. Add cauli rice and the rest of the soy sauce and cook a couple more minutes. Top with green onion and cilantro.
