Refreshing Smashed Cucumber Salad

Ingredients

  • 1 large English or Hot House Cucumber (any variety with a thin skin)
  • 1-2 cloves of Garlic, minced or pressed
  • 1 1/2 tsp (5-7.5 ml) Toasted Sesame Oil
  • 1 1/2 tbsp (15 - 23 ml) Rice Vinegar
  • 2 tsp (10 ml) Light Soy Sauce or Tamari
  • 1 tsp (5 ml) Dark Soy Sauce
  • 1/2 - 1 tsp (2.5 - 5 ml) Chili Oil or to taste
  • 2 tsp (10 g) Sugar
  • 1-2 tsp (5-10 g) toasted Sesame Seeds
  • Salt & Pepper, to taste

Preparation

  1. Start by cutting the ends off the Cucumber. Use the flat part of a wide knife blade to gently smash the length of the Cucumber. It will naturally break into four pieces. Roughly chop these pieces on the diagonal.

  2. Place the chopped Cucumber pieces in a bowl or on a large plate. You can choose to chill the Cucumber for about 10 minutes at this point if desired.

  3. In a separate bowl, mix together the minced Garlic, Toasted Sesame Oil, Rice Vinegar, Light Soy Sauce, Dark Soy Sauce, Sugar, Chili Oil, Salt, and Pepper. Combine well.

  4. Pour the dressing over the smashed Cucumber.

  5. Sprinkle toasted Sesame Seeds on top.

  6. Serve and enjoy!
