Vegan Mac and Cheese
Ingredients
- a small sweet potato
- one garlic clove
- govinda natur sprouted pasta
- 4 Tbsp govinda natur nutritional yeast
- a little lemon juice
- 1/2 Tbsp mustard
- 1/2 Tbsp soy sauce
- 1/2 Tsp onion powder
- some pepper
- frozen peas
- a splash of water
- 1/2 tsp xanthan gum or starch
Preparation
Roast the sweet potato and garlic in the oven until soft.
Cook the pasta.
Peel the potato and put it in a blender together with all the ingredients except for the pasta and the peas and blend until you get a thick creamy sauce. Start with less water and add more if needed. Have a taste and maybe add more salt and lemon juice.
Add the sauce and the peas to the pasta and heat it up.
