Vegan Mac and Cheese

Ingredients

  • a small sweet potato
  • one garlic clove
  • govinda natur sprouted pasta
  • 4 Tbsp govinda natur nutritional yeast
  • a little lemon juice
  • 1/2 Tbsp mustard
  • 1/2 Tbsp soy sauce
  • 1/2 Tsp onion powder
  • some pepper
  • frozen peas
  • a splash of water
  • 1/2 tsp xanthan gum or starch

Preparation

  1. Roast the sweet potato and garlic in the oven until soft.

  2. Cook the pasta.

  3. Peel the potato and put it in a blender together with all the ingredients except for the pasta and the peas and blend until you get a thick creamy sauce. Start with less water and add more if needed. Have a taste and maybe add more salt and lemon juice.

  4. Add the sauce and the peas to the pasta and heat it up.
