Healthy Vegan Mac and Cheese Swap

Ingredients

  • half a sweet potato
  • 2 medium white potatoes
  • 1 carrot
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 2 teaspoons mustard

Preparation

  1. Chop half a sweet potato, 2 medium white potatoes, and 1 carrot.

  2. Boil the chopped vegetables.

  3. Blend the boiled vegetables with 1/2 teaspoon sea salt, 1/2 teaspoon black pepper, 1/2 teaspoon turmeric, 1/2 teaspoon paprika, and 2 teaspoons mustard.

  4. Blend until smooth.
