Vegan Mac and Cheese

Ingredients

  • 1/2 pound of dried pasta of choice
  • heaping 1/2 cup raw cashews soaked overnight
  • 1 large carrot, peeled and steamed to soften
  • 1/3 cup nutritional yeast
  • 1/2 cup veggie broth
  • 1 tablespoon of vegan butter, softened
  • 1 tsp salt
  • 1/4 tsp smoked paprika
  • 1/2 tsp of garlic powder
  • 1/4 tsp onion powder

Preparation

  1. Cook the pasta according to package directions until al dente

  2. In a blender, combine the soaked cashews, steamed carrot, nutritional yeast, veggie broth, vegan butter, salt, smoked paprika, garlic powder, and onion powder. Blend until smooth

  3. Pour the sauce over the cooked pasta and stir well to coat evenly

  4. Optionally, heat the mixture in a saucepan or bake in the oven for a few minutes to warm through
