Vegan Mushroom Pasta with Garlic and Onions
Ingredients
- 2 portions of pasta
- 1 cup of sliced mushrooms
- 1 cup of vegan milk (I used soy milk from Mylk Labs by @floria_tradingbh)
- 1/4 cup white onions
- 1-2 cloves of crushed garlic
- 1/4 vegan Parmesan plus more for garnish
- 1 tablespoon of oil
- Salt and white pepper to taste
Preparation
Cook pasta as on the packet and keep 1 cup of its water
Heat oil and sauté onions until translucent
Add mushrooms, salt and pepper and cook until water completely evaporates
Add garlic and sauté for 1 minute
Add milk and Parmesan
Cook until sauce thickens (add pasta water if too thick)
Toss in pasta and serve with more Parmesan and enjoy
