Vegan Mushroom Pasta with Garlic and Onions

Ingredients

  • 2 portions of pasta
  • 1 cup of sliced mushrooms
  • 1 cup of vegan milk (I used soy milk from Mylk Labs by @floria_tradingbh)
  • 1/4 cup white onions
  • 1-2 cloves of crushed garlic
  • 1/4 vegan Parmesan plus more for garnish
  • 1 tablespoon of oil
  • Salt and white pepper to taste

Preparation

  1. Cook pasta as on the packet and keep 1 cup of its water

  2. Heat oil and sauté onions until translucent

  3. Add mushrooms, salt and pepper and cook until water completely evaporates

  4. Add garlic and sauté for 1 minute

  5. Add milk and Parmesan

  6. Cook until sauce thickens (add pasta water if too thick)

  7. Toss in pasta and serve with more Parmesan and enjoy
