Addictive Roasted Potatoes with Dressing

Ingredients

  • 3 small russet potatoes
  • 3/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 red onion
  • 3 garlic cloves
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne
  • salt to taste
  • 1 tablespoon vegan mayonnaise
  • 3/4 teaspoon apple cider vinegar
  • 3/4 teaspoon Dijon mustard
  • 1/4 teaspoon sriracha
  • chopped parsley

Preparation

  1. Cut the potatoes into 1/2-inch cubes and place them in a bowl with enough water to cover, then soak for 20 to 30 minutes.

  2. Preheat the oven to 450°F.

  3. Dry the soaked potatoes with a paper towel.

  4. Place the potatoes in a bowl and toss with 3/4 teaspoon garlic powder, then add 1 tablespoon olive oil and rub until evenly coated.

  5. Spread the potatoes on a lined or non-stick baking sheet and roast for 20 minutes.

  6. Toss the potatoes and roast for another 15 to 20 minutes until fork tender, crispy, and slightly charred, tossing every 10 minutes.

  7. Heat a little olive oil in a medium skillet over medium heat.

  8. Cook the diced red onion until slightly browned, about 5 to 7 minutes.

  9. Add 3 minced garlic cloves, 1/4 teaspoon paprika, 1/8 teaspoon cayenne, and cook for another minute, then add salt to taste and set aside.

  10. Make the dressing by mixing 1 tablespoon vegan mayonnaise, 3/4 teaspoon apple cider vinegar, 3/4 teaspoon Dijon mustard, and 1/4 teaspoon sriracha.

  11. Remove the potatoes from the oven and add salt to taste.

  12. Mix the potatoes with the cooked red onion and garlic mixture.

  13. Drizzle the dressing on top and add some chopped parsley.
