Easy Homemade Sweet Potato Gnocchi
Ingredients
- 1 large sweet potato (cooked, about 2 cups)
- 3/4 cup flour of your choice
Optional additions
- Gluten-free flour with xanthan gum
- Splash of dairy-free milk (if dough is dry)
- Flavorings such as Italian seasoning, nutmeg, pepper, or cinnamon
Preparation
Bake or microwave the pierced sweet potato until the center is soft.
Scoop out the flesh and mash it well using a fork or ricer.
Mix in the flour and add a splash of dairy-free milk if the mixture seems too dry.
Add flavorings like Italian seasoning, nutmeg, fresh ground pepper, or cinnamon if desired.
Let the dough rest in a covered bowl or bag for 15-20 minutes.
Roll the dough into a log and cut into 1/2 by 1 inch pieces.
Gently roll the pieces on a butter board or fork to create grooves.
Boil in salted water for 1-2 minutes until the gnocchi floats.
Scoop out the gnocchi and serve immediately, or pan fry with a little vegan butter for a crispy exterior.
Tips
Use a 1:1 gluten-free flour with xanthan gum for a gluten-free version.
Top with garlic, nutmeg, ground pepper, pecans, and diced spinach, or experiment with other toppings like shallots and balsamic reduction.
