Crispy Sweet Potato Breakfast Fritters

Ingredients

  • 2 tablespoons flax-seed meal
  • 6 tablespoons water
  • 1 large sweet potato, peeled and grated
  • 1 small bunch of parsley, finely chopped
  • 1 small bunch of chives, finely chopped
  • 1 green pepper, diced
  • 2 tablespoons of flour of your choice (I used chickpea flour)
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • salt and pepper, to taste

Preparation

  1. Mix ground flax seed meal with water in a small bowl.

  2. Let the mixture sit for 10 minutes until it becomes gel.

  3. Add all the ingredients into a large mixing bowl and add in the flax-seed mixture.

  4. Mix until well combined.

  5. Form fritters with your hands.

  6. Fry for 3-5 minutes on both sides over low heat until golden brown.

  7. Serve immediately and enjoy.

Tips

  1. You can fry the fritters or bake them in the oven instead.

  2. Boiling sweet potatoes retains more beta-carotene and makes the nutrient more absorbable than baking or frying.
