Healthier Granola Cups

Ingredients

  • 1/2 cup cashews
  • 1/2 cup pistachios
  • 1/2 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/4 cup pure maple syrup

Optional toppings

  • dark chocolate
  • flaky salt
  • bee pollen

Preparation

  1. Mix together the cashews, pistachios, almonds, pumpkin seeds and maple syrup in a bowl until well-combined.

  2. Transfer the mixture by the spoonful to a muffin pan greased with coconut oil to prevent sticking and pack each mixture down tight.

  3. Bake in the oven at 350F for about 25-30 minutes.

  4. Let cool completely, otherwise they will fall apart.

  5. Drizzle melted chocolate on top.

  6. Sprinkle with flaky salt and enjoy!
