Roasted Chickpea and Avocado Stuffed Sweet Potato
Ingredients
- 1 sweet potato
- 1 15oz can chickpeas (rinsed & dried)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tbsp olive oil
- 1/2 ripe avocado
- Lime juice
Preparation
Preheat oven to 425F. Poke a few holes in the sweet potato and bake for 40 minutes, flipping once halfway.
Toss the chickpeas in paprika, garlic powder, and olive oil. Spread on a parchment-lined baking sheet and cook for 20 minutes, tossing once halfway.
Use a knife to cut a slit down the middle of the sweet potato. Pull the skin back and scoop out a bit of the insides to make room. Stuff with smashed avocado, roasted chickpeas, and a spritz of lime juice.
