Vegan Gluten-Free Chipotle Jackfruit Tostadas
Ingredients
- 1 can young jackfruit
- 1/2 can chipotle peppers in adobo sauce
- 1/2 cup finely chopped red onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
Tostada toppings
- almond flour tortillas
- guacamole
- almond milk greek yogurt
- black beans
- cilantro
- cherry tomatoes
- lime
Preparation
Preheat oven to 400 degrees Fahrenheit.
Drain and rinse the jackfruit well to remove brine. Pat dry and pull apart with fingers.
Combine the chipotle peppers and adobo sauce, pulled jackfruit, seasonings, and red onion in a bowl. Mix well.
Spread the mixture on parchment-lined baking sheets and roast for 15-20 minutes.
Warm the almond flour tortillas in a skillet until crisp
Assemble the tostada by layering the tortilla with guacamole, black beans, almond milk greek yogurt, roasted jackfruit, cherry tomatoes, cilantro, and a squeeze of lime.
