Vegan Wild Garlic Pesto

Ingredients

  • 85g fresh wild garlic
  • 15g fresh basil
  • 75g roasted cashews
  • 75g roasted walnuts
  • 130g olive oil
  • 10g lemon juice
  • 5g agave syrup
  • Salt and pepper
  • optional: 25ml water

Preparation

  1. Wash the wild garlic and basil leaves thoroughly.

  2. In a food processor or blender, combine all the ingredients except the optional water.

  3. Blend until the mixture is smooth and well combined.

  4. If the pesto is too thick, add the optional water gradually and blend again to reach the desired consistency.
