3-Ingredient Potato Hash Pancakes with Marinara Sauce

Ingredients

Potato pancake

  • 4 packed cups shredded raw potato (from 2 large potatoes, Yukon gold variety)
  • 1/2 tbsp salt
  • 2 1/2 tbsp canola oil or neutral cooking oil

Marinara sauce

  • 1 can (400g) diced tomatoes
  • 3 tbsp tomato paste
  • 2 tbsp coco sugar or sugar of choice, adjust to desired sweetness
  • 1 tsp salt, or to taste
  • 1 tsp dried basil
  • 2 tbsp olive oil

Preparation

Marinara sauce

  1. Process all marinara sauce ingredients in a blender until smooth and adjust to taste

Potato pancakes

  1. Mix the shredded potatoes with salt and oil

  2. Heat oil in a large pan over medium heat

  3. Form the potato mixture into pancakes and place in the pan

  4. Cook until golden brown on both sides

  1. You can make the pancakes in smaller cakes or different shapes as desired
