Asparagus and Cheese Puff Pastry Bundles
Ingredients
- 1 bunch asparagus
- 2 teaspoons olive oil
- salt and pepper to taste
- 1 sheet puff pastry
- 150 grams dairy-free herb cream cheese or plain with herbs
- 6 dairy-free cheese slices
Brushing
- 2 tablespoons non-dairy cream
- 1 teaspoon olive oil
Garnish
- 1 tablespoon fresh thyme leaves
- Fresh lemons
Preparation
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Toss the asparagus with olive oil, salt, and pepper.
Roll out the puff pastry on a floured surface and cut it into 6 or 8 squares depending on size.
Spread dairy-free cream cheese on each square, add a slice of dairy-free cheese, and place 3-4 asparagus stalks on top.
Wrap two corners of the pastry over the asparagus and press to seal.
Repeat with the remaining squares and arrange them on the prepared baking sheet, leaving space between each bundle.
Brush each pastry with non-dairy cream and olive oil.
Bake in the oven for 20-25 minutes or until puffed and golden brown.
Sprinkle with more salt and pepper and thyme if desired, and serve immediately with a drizzle of lemon juice.
