Baked Vegan Falafel Burgers

Ingredients

  • 2 x 400g tins organic chickpeas
  • 4 tablespoons flaxmeal
  • 12 tablespoons water
  • 1 large onion
  • 50g fresh coriander with stems
  • 40g fresh parsley
  • 5 cloves garlic
  • Salt and pepper to taste
  • 4 teaspoons cumin powder
  • 1.5 teaspoons ground coriander
  • 4 tablespoons tahini
  • Zest of 1/2 lemon
  • 1 cup besan or chickpea flour

Preparation

  1. Place the onion, fresh herbs, garlic, salt and pepper into a food processor and blend.

  2. Add the chickpeas, cumin, ground coriander, flaxmeal mixture, tahini, lemon zest and flour.

  3. Pulse 3 or 4 times to avoid over-processing; keep some chickpeas whole.

  4. Transfer to a bowl and combine thoroughly with your hands.

  5. Line a tray with baking paper.

  6. Form the mixture into burgers, approximately 150g each, and place on the tray.

  7. Bake in a preheated oven at 350°F or 200°C for 25-30 minutes or until browned and cooked underneath.
