Baked Vegan Falafel Burgers
Ingredients
- 2 x 400g tins organic chickpeas
- 4 tablespoons flaxmeal
- 12 tablespoons water
- 1 large onion
- 50g fresh coriander with stems
- 40g fresh parsley
- 5 cloves garlic
- Salt and pepper to taste
- 4 teaspoons cumin powder
- 1.5 teaspoons ground coriander
- 4 tablespoons tahini
- Zest of 1/2 lemon
- 1 cup besan or chickpea flour
Preparation
Place the onion, fresh herbs, garlic, salt and pepper into a food processor and blend.
Add the chickpeas, cumin, ground coriander, flaxmeal mixture, tahini, lemon zest and flour.
Pulse 3 or 4 times to avoid over-processing; keep some chickpeas whole.
Transfer to a bowl and combine thoroughly with your hands.
Line a tray with baking paper.
Form the mixture into burgers, approximately 150g each, and place on the tray.
Bake in a preheated oven at 350°F or 200°C for 25-30 minutes or until browned and cooked underneath.
