Brown Rice Lo Mein with Peas and Mushrooms

Ingredients

  • 3/4 package brown rice lo mein noodles
  • 2 tsp sesame oil
  • 1 small onion finely chopped
  • 8 oz. mushrooms roughly chopped
  • Dash salt and pepper
  • 1 T tamari
  • 1 tsp garlic powder
  • 1.5 cups frozen peas
  • 1.5 cups bean sprouts
  • 1 T sesame seeds for garnish
  • Chili flakes for garnish

Sauce

  • 2 tsp chili garlic sauce
  • 5 T tamari or soy sauce
  • 1 T sesame oil
  • 2 T rice vinegar
  • 1.5 T agave or maple syrup
  • 1 tsp cornstarch
  • 2 tsp water

Preparation

  1. Cook noodles according to package directions, drain, rinse, and set aside.

  2. In a large skillet, add oil, onion, mushroom, salt, and pepper.

  3. Cook for about 8 to 10 minutes on medium heat, stirring often until tender and browned.

  4. Add tamari and garlic powder, and cook for another minute.

  5. Add frozen peas, bean sprouts, and sauce, and cook for one minute.

  6. Add noodles, stir, and cook for 3 minutes until sprouts wilt slightly.

  7. Add garnish if desired.
