Chocolate, Chickpea, and Almond Brownies

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup unsweetened almond butter (peanut butter also works)
  • 1/2 cup maple syrup
  • 1 tbsp olive oil
  • 1 tbsp vanilla extract
  • 1/3 cup ground almonds
  • 1/4 cup unsweetened cacao powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips of your choice
  • 1 tbsp flaked almonds (for topping)

Preparation

  1. Preheat the oven to 180°C. Line a square brownie pan with non-stick parchment paper.

  2. In a blender, combine the chickpeas, nut butter, maple syrup, olive oil, and vanilla extract. Blend until smooth, scraping down the sides as needed.

  3. Add the ground almonds, cacao powder, baking powder, and salt to the blender. Blend again until smooth.

  4. Fold in the chocolate chips, reserving a few for the top.

  5. Pour the batter into the lined baking tray and gently press it down.

  6. Sprinkle the flaked almonds on top.

  7. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.

  8. Allow the brownies to cool slightly, then cut into squares and enjoy.
