Chocolate Pistachio Pound Cake

Ingredients

  • 1 cup gluten free baking flour
  • 1/2 cup @santabarbarachocolate vegan cocoa
  • 2 tbsp vegan chocolate pudding mix
  • 1/2 cup unsweetened vanilla greek yogurt
  • 1/2 cup cashew milk
  • 1 flax egg
  • 2 tsp liquid stevia
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup pistachios, chopped

Preparation

  1. Preheat the oven to 350 degrees and line a loaf pan.

  2. Whisk together the dry ingredients in a medium bowl.

  3. In a separate bowl, whisk together the wet ingredients, except for the milk.

  4. Stir the dry mixture into the wet, adding the milk a quarter cup at a time.

  5. Evenly spread the batter into the pan and sprinkle chopped pistachios on top.

  6. Bake for 45 to 55 minutes or until the top feels firm to the touch. Enjoy!
