Chocolate Pistachio Pound Cake
Ingredients
- 1 cup gluten free baking flour
- 1/2 cup @santabarbarachocolate vegan cocoa
- 2 tbsp vegan chocolate pudding mix
- 1/2 cup unsweetened vanilla greek yogurt
- 1/2 cup cashew milk
- 1 flax egg
- 2 tsp liquid stevia
- 1 tsp vanilla
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup pistachios, chopped
Preparation
Preheat the oven to 350 degrees and line a loaf pan.
Whisk together the dry ingredients in a medium bowl.
In a separate bowl, whisk together the wet ingredients, except for the milk.
Stir the dry mixture into the wet, adding the milk a quarter cup at a time.
Evenly spread the batter into the pan and sprinkle chopped pistachios on top.
Bake for 45 to 55 minutes or until the top feels firm to the touch. Enjoy!
