Cornflake Crusted Cajun Vegan Burgers
Ingredients
- 1 block smashed silken tofu
- 1/2 head grated cauliflower
- 1 finely chopped capsicum
- 1/2 C finely chopped parsley
- 1/2 C nutritional yeast
- 1 T flour
- 1/2 C roughly crushed cornflakes
- 2 T Cajun spice
- 2 t smoked salt
Coating
- 1 C roughly crushed cornflakes
- 1 t smoked salt
- Olive oil for shallow frying
Preparation
Mix all the listed ingredients in a bowl to make burgers.
In a separate bowl mix the coating ingredients.
Make a golf-sized ball with the burger mix, roll in the coating mixture, and flatten into burgers. This should make 8-9 burgers.
Refrigerate the burgers for 1 hour to firm up.
Shallow fry in hot olive oil on medium heat, or alternatively, brown in olive oil and finish in a preheated oven at 180°C for 20 minutes.
