Cozy Vegetable Broth Bowl
Ingredients
- 1 Tbsp avocado oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 5 carrots, sliced
- 1 cup frozen corn
- 1 cup frozen broccoli
- 1 cup red and yellow pepper
- 2 stalks celery, chopped
- 1 tin organic lima beans
- 1 tin garbanzo beans
- 1 tsp Basil
- 1/2 tsp chili pepper flakes
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1/4 tsp cayenne pepper
- 2 cartons of vegetable broth
Tofu topping
- extra-firm tofu
- 4 tablespoons Tamari
- 3 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 tablespoon fresh grated ginger
- 2-3 tablespoons neutral oil
Preparation
Sauté onions and garlic in avocado oil until onions become translucent.
Add carrots, celery, basil, and chili pepper flakes, then continue sautéing for 3-4 minutes.
Add the remaining ingredients and simmer until vegetables are tender.
Tofu
Combine tofu with tamari, rice vinegar, maple syrup, sesame oil, garlic, and ginger, then allow to marinate for at least one hour or overnight.
Heat neutral oil in a nonstick pan over medium-high heat.
Add the marinated tofu and stir frequently to avoid sticking and burning until cooked.
Tips
This dish is warming and cozy, ideal for cold weather.
Marinating the tofu overnight enhances the flavor.
