Easy Juniper Berry Refrigerator Pickles
Ingredients
- 2.5 cups water
- 1 cup distilled white vinegar
- 10 Persian cucumbers
- 3 tablespoons pickling salt
- 4 tablespoons sugar
- 2 tablespoons juniper berries
- 3 inches ginger
- 2-4 cloves garlic
Preparation
Muddle the juniper berries in a mortar and pestle
Dry toast them for a few minutes on medium heat
Rinse the cucumbers and slice them lengthwise
Dissolve the sugar and pickling salt in the water
Fit the pickles snugly into two jars
Add garlic cloves, ginger, and the juniper berries to the jars
Pour the brine over the cucumbers
If they are not fully submerged, top the jar off with a little water
Seal the jars and let sit somewhere cool and dark for 3 days
Once opened, move them to the fridge
