Easy Vegan Creamed Kale Side Dish
Ingredients
- 12 oz (340g) Chopped Kale stems removed
- 1 cup (140 g) Onion minced
- 3 cloves of Garlic minced
- 2 Tbsp (30 g) Vegan Butter
- 1 Tbsp (15 g) @coldmountainmiso Miso Paste
- 1/4 tsp Nutmeg
- pinch of Red Chili Flakes
- 6 oz (170 g) @tofuttibrands Vegan Cream Cheese
- 1 cup (237 ml) Plant Milk
- 1 cup (45 g) grated @violife_foods Vegan Parmesan
- Salt & Pepper to taste
Preparation
Prepare your kale by removing the stem and giving it a good chop. Bring a pot of salted water to boil and blanch the kale for 30-45 seconds. Rinse under cold water and set aside.
In a large skillet on medium heat, melt the butter and sauté the onions until translucent. About 3-5 minutes. Add in the garlic and chili flakes and cook until fragrant (1-2 minutes).
Add in the plant milk, cream cheese, miso paste and nutmeg. Gently whisk until well combined. Then add in the shredded Parmesan and whisk again until creamy.
Add in the blanched kale and mix well. Check for seasoning and allow it to heat through before serving.
