Easy Vegan Mushroom Soup

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 200g mushrooms, sliced
  • 2 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 1 tbsp nutritional yeast
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the diced onion and minced garlic, and sauté until softened and fragrant.

  3. Stir in the sliced mushrooms and cook until they release their moisture and begin to brown.

  4. Pour in the vegetable broth and unsweetened almond milk, then add the nutritional yeast.

  5. Season with salt and pepper to taste, and bring the mixture to a simmer.

  6. Cook for 10-15 minutes, stirring occasionally, until the soup is heated through and flavors are blended.

  7. Ladle into bowls, garnish with fresh parsley, and serve hot.
