Hearty Vegan Lentil Soup

Ingredients

  • 1 cup dried lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Preparation

  1. Heat olive oil in a large pot over medium heat

  2. Add chopped onion, carrots, and garlic, and sauté until softened

  3. Stir in cumin and paprika

  4. Add dried lentils, vegetable broth, and diced tomatoes

  5. Bring to a boil, then reduce heat and simmer until lentils are tender, about 30-40 minutes

  6. Season with salt and pepper to taste

  7. Garnish with fresh parsley before serving
