Hearty Vegan Lentil Soup
Ingredients
- 1 cup dried lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh parsley, for garnish
Preparation
Heat olive oil in a large pot over medium heat
Add chopped onion, carrots, and garlic, and sauté until softened
Stir in cumin and paprika
Add dried lentils, vegetable broth, and diced tomatoes
Bring to a boil, then reduce heat and simmer until lentils are tender, about 30-40 minutes
Season with salt and pepper to taste
Garnish with fresh parsley before serving
