Fresh Pasta with Zucchini Puree

Ingredients

  • 400g T00 flour
  • 280g pureed zucchini
  • 1 pinch salt

Preparation

  1. Finely puree the zucchini.

  2. Make a well in the flour and add the pureed zucchini.

  3. Form a ball and knead for ten minutes.

  4. Let it rest in an airtight container for one hour in the fridge.

  5. Cut into portions, pass through a pasta roller or with a rolling pin, and shape into tagliatelle.

  6. Cook for 2-3 minutes in boiling salted water.

  1. You can make any pasta shape you prefer.
