Fresh Pasta with Zucchini Puree
Ingredients
- 400g T00 flour
- 280g pureed zucchini
- 1 pinch salt
Preparation
Finely puree the zucchini.
Make a well in the flour and add the pureed zucchini.
Form a ball and knead for ten minutes.
Let it rest in an airtight container for one hour in the fridge.
Cut into portions, pass through a pasta roller or with a rolling pin, and shape into tagliatelle.
Cook for 2-3 minutes in boiling salted water.

You can make any pasta shape you prefer.
