Easy Pan-Fried Zucchini Pizza
Ingredients
- 1 medium zucchini
- 2 tablespoons whole-meal flour
- 1 egg, beaten (use flax-seed egg replacement if vegan)
- 1/2 cup chopped parsley or coriander
- 1 teaspoon tuscan seasoning
- salt and pepper, to taste
- pizza toppings of your choice (e.g., spinach, cherry tomatoes, cheese)
Preparation
Grate zucchini and squeeze out as much liquid as possible.
In a mixing bowl combine grated zucchini, flour, beaten egg or flax-seed egg, parsley or coriander and seasonings.
Transfer the mixture into a lightly greased frying pan and spread out into a circle.
Fry on low heat covered with a lid for 7 minutes or until the bottom is crispy brown.
Flip, then add toppings and fry for another 5 minutes.
Serve immediately and enjoy.
